Baked Zucchini Chips


2 medium-sized zucchini
l/2 c. fresh1y grated Parmesan cheese
garlic salt
freshly ground black pepper, optional

Wash and dry zucchini, and cut into 1I4" thick slices. Arrange zucchini rounds on baking sheet lined with foil(lightly misted with cooking spray) with little to no space between rounds. Lightly sprinkle zucchini with garlic
salt and black pepper. Spread a thin layer of Parmesan cheese on each slice of zucchini. Bake for 15-20 min at425° or until cheese turns a light golden brown. Serve immediately. Ranch or blue cheese dressing makes a good dipping sauce.
