Strawberry Spinach Salad

1#baby spinach
1 pint strawberries, hulled and sliced
1 red onion, sliced and separated

Dressing-combine all & whisk well
6 T. olive oil
1 T. sugar
2 T. champagne vinegar
1 T. poppy seeds
1 t. dry mustard
salt, to taste

Put salad into serving bowl. Add dressing just before serving. Toss to coat.
