Morning Glory Muffins

Combine in large bowl:
2 C. all purpose flour
1-1/4 C. white sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

Stir into dry ingredients:
2 C. grated carrots
1/2 C. raisins
1/2 C. nuts
1/2 C. coconut
1 apple peeled, cored, grated
1 8-oz. can crushed pinehapple, drained

3 eggs
1 C. oil
2 tsp. vanilla

Beat last three ingredients together. Stir into flour mixture until batter is just combined. Spoon into greased muffin cups. Bake at 350 degrees for 20 minutes.
