Cranberry Pork Roast


2# pork loin roast
1 tsp. pepper
1 c. whole cranberry sauce
1/2 c. brown sugar
3 tsp. lemon rind
1 T. lemon juice

Place roast in a pan and score the top. Sprinkle pepper over it. Bake at 325 degrees for 45 minutes. Combine remaining ingredients and spread over roast. Contine to bake and baste frequently for another 45 minutes or until internal temperature reaches 160 degrees. Turn oven up to 425 degrees and roast additiona 5 minutes.
