Carrot Cake Cupcake Jars

1-1/2 c. sugar
3/4 c. white flour
3/4 c. wheat flour
1/2 tsp salt
½ c. old fashioned oatmeal
3/4 tsp baking powder
2-1/4 tsp baking soda
1/2 tsp nutmeg
Optional: 1 c. mix-ins or toppings (chopped nuts, shredded coconut, currants
or raisins)

Heat oven to 350 degrees. In a large bowl combine all dry ingredients, mix
really well and set aside. Add wet ingredients, mix lightly. Pour into
cupcake pan. Bake at 365 degrees for approximately 18-22 min. Insert a
toothpick in the center to check doneness.

Cream Cheese Frosting

8 oz cream cheese, room temp
1/2 cup (1 stick) salted butter, room temp
1 tsp vanilla extract
1 c. powdered sugar
Whip cream cheese until fluffy. Add butter one tablespoon at a time
while mixing. Add vanilla and powdered sugar.
Slice cupcakes in half. Layer into small mason jars with frosting and
desired topping ingredients. Serve chilled.
