Broccoli Salad with Lemon Dressing
2 heads of broccoli heads, stems included
1 large carrot greated
1 apple cored and shopped
1/2 wmall red onion, thinkly sliced
1/2 c. pccans or walnuts toasted
1/2 c. craisins or raisins
1/2 cup mayo
1/2 cup sour cream
1/2 T. lemon juice (freshly squeezed
1/2 T. sugar
1/4 tsp. sea salt
1/8 tsp. black pepper
Peel the stems and chop broccoli into bite-sized pieces. Grate carrot, chop apple and thinkly slice onion and trnasfer into salad bowl. Add toasted pecans and dried cranberries.
In a small bowl, whisk together all salad dressing ingredients then add dressing into the salad to taste and toss to combine.
